That would be Bass in the summer salmon in the fall and trout in the spring. Canada dose have a wide range of fish Pike Northern pike, Crappie, Pickerel (Wallie) Catfish, Chanel Catfish,Perch the list is endlesss well not endles but i could go all day. All of the fish i mentioned could fall under your question. Now my favorite is Bass, but i do enjoy fishing other types.
If they are targeting salmon, I would think trolling would be the most popular type. Walleye would probably be jigging. Pike and smallmouth would be casting to rip rap shorelines.
Of course all methods will work for many different species.

Alberta, Saskatchewan, and Manitoba for sure are big walleye fisheries. Although Saskatchewan has the reputation for fishing for Northern Pike quite a bit. I am from Saskatchewan and love fishing for pike and when I’m in MB get bugged about eatin just pike when walleye are the prefered fish in MB.
Ontario and Quebect and Yukon, and NWT not too sure about. But the east coast it would have been cod but thats depleted now.
Really it depends on the locationa but the prairies troll on the lakes West coast fly fishes and east goes fishin in the ocean.
